Easy Sweet Potato Casserole Recipe (Vegetarian)
Ingredients:
  • 2 1/2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 3/4 cup packed brown sugar
  • 1/4 cup butter, softened
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup finely chopped pecans, divided
  • Cooking spray
  • 2 cups miniature marshmallows
Preparation
  • Step 1 – Preheat oven to 375°.
  • Step 2 – Place the sweet potatoes in a Dutch oven, and cover with cold water. Bring to a boil. Reduce heat, and simmer for 15 minutes or until very tender. Drain; cool slightly.
  • Step 3 – Place potatoes in a large bowl. Add sugar and next 3 ingredients (through vanilla). Mash sweet potato mixture with a potato masher. Fold in 1/4 cup pecans. Scrape potato mixture into an even layer in an 11 x 7-inch baking dish coated with cooking spray. Sprinkle with remaining 1/4 cup pecans; top with marshmallows. Bake at 375° for 25 minutes or until golden.
  • Step 4 – Relax & enjoy!

Glistening skin and juicy meat are guaranteed with a “spatchcocked turkey”. It’s also a great way to eat consistently healthy via lean, clean protein for an extended amount of time! All you do is cut out the backbone, press the turkey to flatten, and brush with a mix of olive oil, salt, and pepper. (from Martha Stewart online).

Ingredients
  • Fresh/thawed Turkey
  • Coarse Sea Salt & Pepper
  • Olive Oil
  • Thyme
  • Rosemary
Instructions
  • Step 1 – Cut out the Backbone. Start with the turkey breast-side down. Use scissors/poultry shears to cut along both sides of the backbone, beginning at the tail end. I’ve also used an electric knife to do this.
  • Step 2 – Open the Turkey. Set aside backbone (and giblets) for stock. Take hold of both newly cut edges, and open the turkey. Remove any large pieces of fat. Turn the turkey, breast-side up. Break the Breastbone
  • Step 3 - Place your hand on one side of the breast, close to the breastbone, and push down firmly until you hear a crack. Repeat on the other side. (For better leverage as you work, stand on a step stool.)
  • Step 4 – Flatten the Turkey. Pull the thighs outward so the turkey lies flat, with the wings facing inward. Tuck the wing tips under to secure.
  • Step 5 – Brush with Oil and Roast. Preheat oven to 450 degrees. Place the turkey on a rimmed baking sheet. Use a basting brush to apply oil mixture. Let stand for 30 minutes.  Brush or rub turkey all over with mixture. Roast, rotating sheet halfway through and basting 2 – 3 times. Check the turkey with a meat thermometer by inserting in the thickest part at about 1hour and 10 minutes of cooking. The temperature MUST read 165 degrees or higher before it’s fully cooked.
  • Step 6 – Relax & enjoy!
